On a cool spring day there is always need for a warm bowl of a good creamy soup.  This recipe for cream of broccoli soup has a cheesy, creamy texture that will satisfy.  This is incredibly easy to make and brings out a bright green soup to liven your day.

Slice up one large potato and one large stalk of broccoli.  Add the slices to a large pot with three cups of water (or vegetable stock to bring out more flavor).  Add a tablespoon of salt and boil until the potatoes and broccoli are fork tender.

Add the entire contents of the pot to a blender (I love my Vitamix for this job, but any blender will do).  Add 1 cup of nutritional yeast and blend the mixture until it is a smooth creamy texture.

Pour into a bowl and add a few sliced green onions to the top for and added flair and flavor.
